Congratulations to Kris Tidball, winner of the first annual Seasonal Recipe Contest!
We loved this warm, exciting soup so much and so did our voters! The recipe is reposted below with links to add the ingredients to your bag this week. Thanks to everyone who submitted a recipe (they were all tasty looking!) and for joining us in celebrating one of fall’s most versatile veggies, the pumpkin.
- 1 pie pumpkin*
- 1 can coconut milk
- 1 clove garlic*
- 1/2 onion*
- 3 strips roasted red pepper*
- 1-2 tsp green curry paste
- 3 cups water
- 3 tsp chicken bouillon
- salt, pepper, and hot pepper flakes
Peel, de-seed , and rough chop the pumpkin. Rough chop onion, pepper, and garlic.
Throw all ingredients into a pot and simmer for 2 hrs (the house will smell amazing).
Puree to desired texture.
