Tarragon Butter


Tarragon is a delicate, green herb with long, thin pointy leaves and a singular flavor with hints of anise. Mix up this compound butter and serve atop your favorite protein. Marries beautifully with salmon, chicken, steak, or pork.

2 tbsp shallots, minced
2 tbsp fresh tarragon, minced
1 1/2 tsp fresh lemon juice
1/2 c butter
salt & pepper, to taste

In a small bowl, cream butter with an electric mixer, or use the paddle attachment on your stand mixer. Add in lemon juice, tarragon, black pepper, and shallot. Season to taste with salt. Chill for at least 1 hour.
